Ignacio Mattos is one of the top chefs in the world. Uruguayan by birth and now in New York City, he has opened several of the highest-rated restaurants in the Big Apple.

The great Michael Hainey, now the Writer at Large for Air Mail, got the elusive Mattos on the record for an incredible article, The King of New York.

The whole article is worth a read, but this quote hit me over the head.

Mattos says that Gohar opened up another world for him.

I had to surrender to the fact that I deserved this thing. Love. Happiness. You don’t think at first you can handle that level of intimacy. But then I realized how much it had been lacking. I think I have a love of romance.

Romance will save us as a species.
